Cinnamon Applesauce Muffins
This is a favorite of anyone who tries one! It is vegan friendly, and food storage friendly.
This recipe can easily be doubled, or even tripled!!!
1/4 cup of oil -safflower, canola, or cocount.
1/2 cup of molasses, honey, or agave. (I like to use 1/4 c molasses and 1/4 c agave)
1 cup applesauce - unsweetened
1 1/2 cup freshly milled wheat flour (or any other grain flour!)
1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp sea salt
1/2 tbsp cinnamon - more or less
optional:
raisins
1/8 tsp cloves (or a couple of drops of Clove essential oil)
1/4 cup freshly flaked oats
Preheat oven to 375. Grease 12 cup muffin tin. Mix molasses, and applesauce, and oil first. Then add dry ingredients, and stir in raisins. Drop in muffin cups and bake 18-20 minutes. Makes 12 muffins.
